Ever since he can remember, Stuart was always interested in food. Whether baking ingredients with his mother or baking at school, he has always had a passion to create and entertain. Growing up, he realised he had an innate gift for cooking and it was whilst enrolled at the University of Edinburgh on a Community Education degree, that he contemplated turning his passion into a dynamic, robust, thriving career.
CHEF | STATE | OF | MIND is a well-known Chef in the Edinburgh and East Lothian area, and he has also travelled and operated further afield in search of the finest ingredients and the best training. Constantly investigating evolving cuisines or cooking methods, he has a keen interest in the latest techniques. His dishes are delicious - seasonal, vibrant and with the freshest and most sustainably sourced ingredients possible. His cooking is predominantly steeped in the traditional French classics - complemented by contemporary twists that are utilised in his daily cooking.
